Spaghetti Bolognese ala Amara

This time around I'm going to share one of my food recipes. In Jakarta, I cook very seldomly - In Karlsruhe, I cook twice a week.. well three times a week tops - In Bali, I cook pretty often so my ability in kitchen department is pretty much ok lah. I love cooking and most importantly my husband loves my cooking (I'm so kicking him in the butt if he hates my cooking). LoL 

Why Bolognese instead of Carbonara? I haven't gotten the perfect recipe for Carbonara actually, tried couple times but couldn't get the cheese right just yet. But I'm getting there, you'll see. 

Spaghetti Bolognese ala Amara. 

Serves 4.

200g chicken thigh meat (because I hate chicken breast - this is totally up to you whichever you want to use - minced chicken is also OK)
150g spaghetti pasta (I use La Fonte)
1 Bottle of Prego Fresh Mushroom
1/2 teaspoon Pepper Seasonings (or to taste)
1 block of Maggi Chicken Stock (any brand will do actually)
1/2 teaspoon Salt
4 tablespoons of extra virgin olive oil
2 teaspoons Kraft Parmesan Cheese to garnish



Cut up the chicken into small pieces. 

Add about 4 tablespoons of regular cooking oil to a hot pan or stove top grill pan.

When the pan is hot, add the chicken. And turn the heat to medium or medium-low.

Cook the spaghetti according to manufacturer’s instructions. I always use La Fonte pasta.

Back to chicken pan. Add whole bottle of Prego Fresh Mushroom sauce. Stir through.

Add the salt and pepper. Add Maggi Chicken Stock block. Add ketchup at will. Stir for a few seconds.

Taste them. Need more salt? Pepper? Ketchup? Do it now. 
Check the Spaghetti, if it's properly cooked then drain them. 

Put the drained Spaghetti in big bowl / plate and add the sauce from the other pan on top. 

Garnish with Kraft Parmesan Cheese (in restaurant usually they use chopped parsley) and serve immediately. Dig in!

A Year Ago Today

This has got to be one of the hardest post for me to ever write. I've only typed one sentence and I'm already tearing up. One year ago today my Grandmother Corry Waworuntu - Kaligis passed away. It was truly been the saddest day of my life. I loved this woman more than anything. She has been the true pillar of our entire Kaligis - Waworuntu family. My Grandmother raised a total of 5 children.... 2 sons and 3 daughters (including my mom).

I had always felt a certain connection between us that I have only ever shared with a few people in my life. Have you ever met someone and just felt like they were not only of the same type as you, but almost an extension of your own self? My grandma was like that for me and I see so much of myself in her. My grandma and I, we had special moments together :')

When she passed away it wasn't exactly an unexpected passing as she had been slipping away for quite some time and had alzheimers had slowly robbed her of her memory and functioning. For the first time in my life, I felt myself shatter from the inside out and as much as I tried to work through it, felt totally consumed by the pain of losing someone so close. A year after her death, I still feel that gnawing snese of grief within. 

I miss her. 
I miss her smile. 
I miss her laugh. 
I miss her prayers. 
I miss her voice. 
Her strength. 
I miss her UNCONDITIONAL LOVE that she has for our family. 
I miss the funny sayings she would say to me as I was growing up. 
I miss her cookings. 
I miss knowing that she is just a phone call away or that we could just drive to Bandung and she would be there. 

But for now... see you in my dreams grandma!

Cathy Nguyen

Have you ever heard of Cathy Nguyen? I've stumbled upon her videos on YouTube few months ago and I fell in love instantly. I've been enjoying her singing and songs for months (my husband Jonah is the one and only witness), they're really good and been on my Top 25 Most Play List on my iTunes :) Here are some of her videos on Youtube which I love so deep...
